I ran a poll over on my Instagram and a whopping 97% of my community asked for this recipe so here it is!

This recipe was originally one I downloaded off the internet almost 15 years ago and have adapted each time I make it, always ending up as something totally different! πŸ˜‚

It’s such a great one to cram in lots of nutrient-dense foods all ideal for supporting immunity especially as it starts to get chilly.

Ingredients:

  • 1 onion

  • 2-4 cloves of garlic

  • 2 tsp fresh grated ginger

  • 4 cups of water/veggie stock/broth

  • 1 400g tin diced tomatoes

  • 1.5 cups red lentils

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp turmeric

  • 1 tsp cardamom

  • 1 tsp cinnamon

  • .5 tsp cayenne pepper

  • 1 tsp salt to taste

  • 2 large handfuls of leafy greens (silverbeet, spinach, kale etc.)

Method:

  1. Saute onion, garlic and ginger until onions are translucent

  2. Add veggie stock/water, red lentils, spices and tomatoes and simmer for 20 mins until red lentils are cooked through. Keep stirring regularly

  3. Add silverbeet/spinach/leafy greens of choice.

  4. Serve with either brown rice, quinoa, steamed cauliflower rice - or a mix of all! Lemon wedge and/or natural yoghurt also go well.
