Red Lentil Daal
I ran a poll over on my Instagram and a whopping 97% of my community asked for this recipe so here it is!
This recipe was originally one I downloaded off the internet almost 15 years ago and have adapted each time I make it, always ending up as something totally different! π
Itβs such a great one to cram in lots of nutrient-dense foods all ideal for supporting immunity especially as it starts to get chilly.
Hope you enjoy it!

.5 tsp cayenne pepper
1 tsp salt to taste
2 large handfuls of leafy greens (silverbeet, spinach, kale etc.)
Method:
Saute onion, garlic and ginger until onions are translucent
Add veggie stock/water, red lentils, spices and tomatoes and simmer for 20 mins until red lentils are cooked through. Keep stirring regularly
Add silverbeet/spinach/leafy greens of choice.
Serve with either brown rice, quinoa, steamed cauliflower rice - or a mix of all! Lemon wedge and/or natural yoghurt also go well.
