Bi.o.tanoun: animals and plant life of a particular region.I had the pleasure of visiting Biota Dining in the Southern Highlands NSW last week and had an incredible dining experience with my beautiful friend and photographer Dominique Cherry. James Viles is the mastermind behind the establishment and has absolutely outdone himself from the tastiest dishes to the beautiful gardens and décor.Our three amazing dishes from the weekend brunch menu are as follows (pictured below):
- autumn fruits - organic yoghurt - fruit juices - soaked oats
- soft maize - provolone - forest mushrooms - poached egg (fave!)
- creamed hen eggs - serrano - sourdough - wild fennel
